Here I am

After almost 33 years in which I tried to reach far targets, I finally decided to commit myself to what in my life has always been natural and spontaneous: the passion for Mr. The Taste.
I can’t even define it a passion, speaking true, its a characteristic, I think, genetic. Since I was a child I had a great appetite and a good ‘taste memory’, that I improved during years. Finally, my good friend Leo called me “accalappiatrice di gole” that in English would sound like ‘throats catcher’ or better ‘the one who catch people with delicacies”.
Like the artist combine basic colours to create nuances and live images, I chose in my mind different tastes and flavours and instinctively combine them on my tongue and in my nose before putting them on a dish.
My recipes search traditions all over the world, they start from raw materials, few ingredients to bring out the best of each.
This blog draws form the strong requests of my friends. I’ve always been a bit reluctant, and may be a bit snob too, to speak about my recipes with those who use premade food and follow written recipes. I’ve thousand of books on cooking, but I never read recipes, I sniff them, I taste them, I blend them. For this reason the recipes that I will post here, are suggestions, that you could combine with your fantasy.
My relationship with food is carnal, it starts from the first chakra to climb up to Sahasrara. Combine tastes is, for me, a meditation. I have to fall in love with my guests to be able to create a recipe for them that could be healing both for body and for mind. The aim is to make my guest feel welcomed and hugged so to stimulate authenticity in the exchange. The scent of my cooking is the one of herbs and spices that I search around to then combine them according to their vibrations and their healing power.
It is through the food that Dennis and I learned to know each other and to share our passions, to be more precise, everything started from Cantonese rice on a terrace perfumed of geraniums and basil.
